- 0.5 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp pure vanilla extract
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- 0.5 tsp salt
- 1 cup mashed ripe bananas (about 3 very ripe bananas)
- 0.5 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the pan by greasing a 9×5-inch loaf pan.
- Cream the butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each.
- Stir in the vanilla extract and mashed bananas.
- Combine the flour, baking soda, and salt in a separate bowl.
- Mix the dry ingredients into the wet mixture until just combined.
- Add nuts if desired.
- Pour the batter into the prepared loaf pan.
- Bake for 55–65 minutes or until a toothpick comes out clean.
- Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Serve warm with butter, cream cheese, or peanut butter for an extra indulgent treat.
