Description

Light and refreshing no-bake lemon cheesecake bars with a creamy filling and crispy graham cracker crust, perfect for summer gatherings.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup whipped cream
  • 1/2 cup lemon curd
  • Zest of 1 lemon

Instructions

  1. In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press into a 9×9 inch baking dish to form the crust.
  2. In another bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
  3. Gently fold in the whipped cream to the cream cheese mixture.
  4. Spread the cream cheese filling evenly over the graham cracker crust.
  5. Spoon lemon curd over the cream cheese layer and spread it evenly.
  6. Sprinkle lemon zest on top.
  7. Cover and refrigerate for at least 4 hours, until set.
  8. Cut into squares and serve chilled, optionally garnished with whipped cream or fresh berries.
