- 2 to 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- Mash the ripe bananas until smooth.
- Add the melted butter to the mashed bananas.
- Mix in the baking soda and a pinch of salt.
- Incorporate the sugar, beaten egg, and vanilla extract.
- Stir in the all-purpose flour until just incorporated.
- Fill the muffin cups about two-thirds full with the batter.
- Bake for 18-20 minutes and check for doneness with a toothpick.
- Cool in the tin for a few minutes before transferring to a wire rack.
