Description

Delicious and easy banana bread muffins that are soft, moist, and bursting with banana flavor.


Ingredients

  • 2 to 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Mash the ripe bananas until smooth.
  3. Add the melted butter to the mashed bananas.
  4. Mix in the baking soda and a pinch of salt.
  5. Incorporate the sugar, beaten egg, and vanilla extract.
  6. Stir in the all-purpose flour until just incorporated.
  7. Fill the muffin cups about two-thirds full with the batter.
  8. Bake for 18-20 minutes and check for doneness with a toothpick.
  9. Cool in the tin for a few minutes before transferring to a wire rack.
