Description

These pancake muffins combine the fluffiness of pancakes with the convenience of muffins, perfect for busy mornings.


Ingredients

Scale
  • 1 cup pancake mix
  • 1 cup milk
  • 1 large egg
  • 1 cup cooked sausage, crumbled
  • 1/2 cup shredded cheese
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a muffin tin by lightly greasing it.
  3. Mix together the pancake mix, milk, and egg until just combined.
  4. Add in the crumbled sausage and shredded cheese, folding gently to combine.
  5. Stir in maple syrup if using.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  8. Cool for a few minutes before removing from the tin.
  9. Enjoy warm, optionally with fresh fruit or syrup.

Notes

Add veggies or different meats for variation. For sweet muffins, skip sausage and cheese and add chocolate chips or fruit.
