These pancake muffins combine the fluffiness of pancakes with the convenience of muffins, perfect for busy mornings.

- 1 cup pancake mix
- 1 cup milk
- 1 large egg
- 1 cup cooked sausage, crumbled
- 1/2 cup shredded cheese
- 1 tablespoon maple syrup (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a muffin tin by lightly greasing it.
- Mix together the pancake mix, milk, and egg until just combined.
- Add in the crumbled sausage and shredded cheese, folding gently to combine.
- Stir in maple syrup if using.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
- Cool for a few minutes before removing from the tin.
- Enjoy warm, optionally with fresh fruit or syrup.
Notes
Add veggies or different meats for variation. For sweet muffins, skip sausage and cheese and add chocolate chips or fruit.
