  • Chopped cilantro for garnish

Instructions

  1. Prepare the chicken: Heat 1 tablespoon of olive oil in a pan over medium heat, then season chicken with chili powder, cumin, salt, and pepper.
  2. Cook the chicken: Place seasoned chicken in the pan and cook for 6-7 minutes on each side until golden brown and fully cooked. Remove from the pan and set aside.
  3. Toast the rice: In the same pan, add rice and toast for 1-2 minutes, stirring frequently.
  4. Simmer the rice: Pour in chicken broth and bring to a gentle simmer, then nestle the chicken back into the rice.
  5. Cook together: Cover and reduce heat to low, cooking for 18-20 minutes until rice is tender.
  6. Add the cheese: Stir in queso until well combined for a creamy effect.
  7. Garnish and serve: Remove from heat, garnish with cilantro, and serve hot.

Notes

For added spice, consider using more chili powder or jalapeños. It can also be made ahead of time or frozen for later use.
