Description

Ingredients

1 cup unsalted butter, softened

2/3 cup granulated sugar

2 large egg yolks

1 tsp vanilla extract

1/2 tsp almond extract

2 cups all-purpose flour

3/4 cup finely ground almonds (or almond flour)

1/4 tsp salt

1/2 tsp cinnamon (optional)

1/2 cup raspberry jam (or your favorite flavor)

Powdered sugar, for dusting


Instructions

1. In a large bowl, cream butter and sugar until light and fluffy.

2. Add egg yolks, vanilla, and almond extract, beating until combined.

3. In another bowl, whisk together flour, ground almonds, salt, and cinnamon.

4. Gradually add dry ingredients to the butter mixture, mixing until a dough forms.

5. Divide dough in half, flatten into disks, wrap in plastic, and chill for 1 hour.

6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

7. Roll out dough on a lightly floured surface to 1/8-inch thickness.

8. Use a round or fluted cookie cutter to cut out cookies, then cut centers from half of them for the tops.

9. Place cookies on prepared sheets and bake 10–12 minutes, until lightly golden at the edges.

10. Cool completely.

11. Spread a small amount of jam on the bottom cookies and gently press the cut-out tops over them.

12. Dust finished cookies generously with powdered sugar.

Notes

For festive flair, use different jams like apricot, strawberry, or blackberry.

Add lemon zest to the dough for a bright twist.

Store cookies in an airtight container at room temperature for up to 5 days.
