Ingredients

- 2 tablespoons confectioner’s sugar
- 1 pinch salt
- 1 cup lemon curd
- 1 tablespoon lemon zest
Instructions
- In a large mixing bowl, combine the heavy cream, confectioner’s sugar, and a pinch of salt.
- Using an electric mixer, whip the cream mixture on medium speed for about 2-3 minutes until medium peaks form.
- Gently fold in the lemon curd and lemon zest with a spatula.
- Divide the mousse into serving glasses or bowls, approximately 1/2 heaping cup each.
- Refrigerate the filled glasses for at least 1 hour.
- Garnish with whipped cream or a sprinkle of lemon zest if desired.
