Description
This Lemon Herb Chicken is a light, zesty, and flavorful dish that turns any dinner into something special. Marinated in lemon juice, garlic, and fresh herbs, it’s juicy, aromatic, and perfect for grilling, baking, or pan-searing.
Ingredients
4 boneless, skinless chicken breasts
3 tbsp olive oil
3 tbsp fresh lemon juice
1 tbsp lemon zest
3 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh thyme leaves
1 tbsp fresh rosemary, chopped
Salt and pepper to taste
Optional: lemon slices for garnish
Instructions
1. In a bowl, whisk together olive oil, lemon juice, zest, garlic, parsley, thyme, rosemary, salt, and pepper.
2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over them.
3. Marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).
4. Preheat grill or skillet over medium-high heat.
5. Remove chicken from marinade and cook for 5–6 minutes per side, until golden and fully cooked (internal temp 165°F/75°C).
6. Let rest for 5 minutes before slicing.
7. Garnish with fresh herbs and lemon slices before serving.
Notes
Use chicken thighs for a juicier option.
Add a drizzle of honey to the marinade for a sweet-savory balance.
Serve with roasted vegetables, rice, or a fresh salad.
Perfect for meal prep — the chicken stays tender and flavorful even after reheating.
