Description

Ingredients

  • 2 chicken breasts, diced
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until no longer pink.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add orzo, spinach, and lemon juice along with 3 cups of water or chicken broth.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes until orzo is cooked and spinach is wilted.
  6. Season with salt and pepper to taste.
  7. Stir in Parmesan cheese if desired, and serve warm.
