- 2 chicken breasts, diced
- 1 cup orzo pasta
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 lemon, juiced
- 2 tablespoons olive oil

- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until no longer pink.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add orzo, spinach, and lemon juice along with 3 cups of water or chicken broth.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes until orzo is cooked and spinach is wilted.
- Season with salt and pepper to taste.
- Stir in Parmesan cheese if desired, and serve warm.
