Description

Delightful dessert bars combining creamy cheesecake with fresh lemons and blueberries, perfect for gatherings.


Ingredients

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons melted butter
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 325°F (163°C) and line an 8×8 inch baking pan with parchment paper.
  2. Combine the graham cracker crumbs, ¼ cup of sugar, and melted butter in a medium bowl until resembling wet sand.
  3. Press the mixture firmly into the bottom of the prepared baking pan to form a crust.
  4. Bake the crust for 10 minutes, then allow it to cool.
  5. Beat the softened cream cheese until smooth, then mix in ½ cup of sugar and 2 tablespoons of flour until well blended.
  6. Add eggs one at a time, then mix in lemon juice, lemon zest, and vanilla until smooth.
  7. Fold in the blueberries gently.
  8. Pour the filling over the cooled crust and spread it evenly.
  9. Bake for 35-40 minutes until edges are set and center jiggles slightly.
  10. Cool at room temperature, then refrigerate for at least 4 hours or overnight.

Notes

Serve plain or with whipped cream and fresh blueberries. Store in an airtight container for up to 1 week.
