Description

A delightful blend of rich, creamy cheesecake with bright flavors of lemon and fresh blueberries, perfect for various occasions.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan.
  3. Beat cream cheese in a mixing bowl until smooth. Gradually add sugar and mix until well combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream, lemon juice, and lemon zest until smooth.
  6. Fold in blueberries gently.
  7. Pour cheesecake batter over the crust and spread evenly.
  8. Bake for 50-60 minutes until the center has a slight jiggle.
  9. Cool inside the oven for about 1 hour.
  10. Chill in the refrigerator for at least 4 hours before serving.

Notes

Use fresh blueberries for best flavor. You can wrap the springform pan in aluminum foil for a water bath to prevent cracks.
