Description

Delightful lemon bars with a buttery crust, perfect for any occasion.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  2. Mix the crust ingredients: Combine flour and powdered sugar, add softened butter, and mix until crumbly.
  3. Press the mixture firmly into the bottom of the greased dish.
  4. Bake the crust for 15 minutes.
  5. Make the lemon filling by whisking together eggs, granulated sugar, lemon juice, lemon zest, and baking powder.
  6. Pour the lemon mixture over the baked crust.
  7. Bake again for an additional 20 minutes until set.
  8. Cool in the dish, then dust with powdered sugar before cutting into squares.

Notes

Best served chilled or at room temperature. Can enhance with whipped cream or vanilla ice cream.
