Ingredients

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.
- Mix the crust ingredients: Combine flour and powdered sugar, add softened butter, and mix until crumbly.
- Press the mixture firmly into the bottom of the greased dish.
- Bake the crust for 15 minutes.
- Make the lemon filling by whisking together eggs, granulated sugar, lemon juice, lemon zest, and baking powder.
- Pour the lemon mixture over the baked crust.
- Bake again for an additional 20 minutes until set.
- Cool in the dish, then dust with powdered sugar before cutting into squares.
Notes
Best served chilled or at room temperature. Can enhance with whipped cream or vanilla ice cream.
