- 1 lb ground beef
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour
- 2 cloves garlic, minced
- 1 egg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup butter
- 2 cloves garlic, minced (for sauce)
- Parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, Parmesan cheese, almond flour, minced garlic, egg, salt, and pepper.
- Mix until well combined and form the mixture into meatballs about 1 to 1.5 inches in diameter.
- Place the meatballs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until fully cooked and the internal temperature reaches 160°F (71°C).
- In a saucepan, melt butter over medium heat, and add minced garlic.
- Cook until fragrant, then add cooked meatballs to the pan, tossing them in the garlic butter.
- Garnish with parsley and serve warm.
Notes
These meatballs can be served over zucchini noodles, in a salad, as an appetizer, or with low-carb bread. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
