- 2 cups wild rice
- 2 cups kale, chopped
- 2 medium sweet potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 cup cranberries (optional)
- 1/4 cup walnuts or pecans (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced sweet potatoes with olive oil, salt, black pepper, garlic powder, and paprika.
- Spread the seasoned sweet potatoes on a baking sheet and roast for about 25-30 minutes.
- Cook the wild rice according to the package instructions (about 45-50 minutes).
- Add the chopped kale to the pot 10 minutes before the wild rice is finished cooking.
- Combine the wild rice, kale, and roasted sweet potatoes in a large bowl.
- Mix in optional cranberries and nuts if desired.
- Serve warm with your favorite dressings or garnishes.
