Description

A nutritious and hearty meal combining wild rice, kale, and sweet potatoes, perfect for lunch or dinner.


Ingredients

Scale
  • 2 cups wild rice
  • 2 cups kale, chopped
  • 2 medium sweet potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup cranberries (optional)
  • 1/4 cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with olive oil, salt, black pepper, garlic powder, and paprika.
  3. Spread the seasoned sweet potatoes on a baking sheet and roast for about 25-30 minutes.
  4. Cook the wild rice according to the package instructions (about 45-50 minutes).
  5. Add the chopped kale to the pot 10 minutes before the wild rice is finished cooking.
  6. Combine the wild rice, kale, and roasted sweet potatoes in a large bowl.
  7. Mix in optional cranberries and nuts if desired.
  8. Serve warm with your favorite dressings or garnishes.
