Ingredients

  • 3 cups cooked pasta (e.g., rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella balls, halved
  • 1 cup pepperoni slices
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Combine the cooked pasta, cherry tomatoes, black olives, mozzarella balls, pepperoni, red onion, and bell pepper in a large bowl.
  2. Whisk together the olive oil, red wine vinegar, Italian seasoning, and a pinch of salt and pepper in a separate small bowl.
  3. Pour the dressing over the pasta salad and toss to combine all the ingredients well.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve cold as a side dish or main dish.

Notes

For enhanced flavor, garnish with fresh basil or a sprinkle of grated Parmesan cheese before serving. To revive stored pasta salad, add more olive oil and vinegar as needed.
