A delightful twist on traditional Irish soda bread, these muffins are soft, flavorful, and perfect for breakfast or snacks.
Ingredients

- 3 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 0.33 cup granulated sugar (optional)
- 0.5 cup unsalted butter, cold and cubed
- 1 cup raisins or currants
- 1 tbsp caraway seeds (optional)
- 1.25 cups buttermilk
- 1 large egg
- melted butter and coarse sugar for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with paper liners.
- Whisk together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar (if using).
- If adding caraway seeds, sprinkle them in along with the raisins or currants.
- Cut the cold, cubed butter into the dry mixture until it resembles coarse crumbs.
- Whisk the egg and buttermilk together in a separate bowl until well combined.
- Pour the wet mixture into the dry mixture and stir gently until just combined.
- Scoop the batter into prepared muffin cups, filling nearly to the top.
- Brush the tops with melted butter or buttermilk, if desired, and sprinkle with coarse sugar.
- Bake for 18–22 minutes until golden brown and a toothpick inserted comes out clean.
- Allow to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
Notes
Serve warm with butter, marmalade, or jam. Store in an airtight container for up to 3 days or freeze for longer storage.
