Description

A delightful twist on traditional Irish soda bread, these muffins are soft, flavorful, and perfect for breakfast or snacks.


Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 0.33 cup granulated sugar (optional)
  • 0.5 cup unsalted butter, cold and cubed
  • 1 cup raisins or currants
  • 1 tbsp caraway seeds (optional)
  • 1.25 cups buttermilk
  • 1 large egg
  • melted butter and coarse sugar for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with paper liners.
  2. Whisk together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar (if using).
  3. If adding caraway seeds, sprinkle them in along with the raisins or currants.
  4. Cut the cold, cubed butter into the dry mixture until it resembles coarse crumbs.
  5. Whisk the egg and buttermilk together in a separate bowl until well combined.
  6. Pour the wet mixture into the dry mixture and stir gently until just combined.
  7. Scoop the batter into prepared muffin cups, filling nearly to the top.
  8. Brush the tops with melted butter or buttermilk, if desired, and sprinkle with coarse sugar.
  9. Bake for 18–22 minutes until golden brown and a toothpick inserted comes out clean.
  10. Allow to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with butter, marmalade, or jam. Store in an airtight container for up to 3 days or freeze for longer storage.
