Smoky, spicy, and full of flavor — these Chipotle Chicken Tacos bring restaurant-style taste right to your kitchen. Tender chicken marinated in chipotle, lime, and garlic, then grilled and wrapped in warm tortillas with fresh toppings.
Ingredients
1 lb boneless, skinless chicken thighs
2 tbsp chipotle peppers in adobo sauce, minced
2 cloves garlic, minced
2 tbsp lime juice
1 tbsp olive oil
1 tsp cumin
1 tsp smoked paprika
1/2 tsp chili powder
Salt and pepper, to taste
8 small corn or flour tortillas
1/2 cup diced red onion
1/2 cup chopped cilantro
1 avocado, sliced
1/2 cup crumbled queso fresco or feta
Lime wedges, for serving
Instructions
1. In a bowl, mix chipotle peppers, garlic, lime juice, olive oil, cumin, smoked paprika, chili powder, salt, and pepper.
2. Add chicken thighs to the marinade, coating well. Let sit for at least 30 minutes (or up to 2 hours in the fridge).
3. Preheat grill or skillet over medium-high heat. Cook chicken for 5–6 minutes per side until nicely charred and cooked through.
4. Transfer chicken to a plate and let rest 5 minutes, then slice thinly.
5. Warm tortillas on a dry pan or directly over a flame until soft and slightly toasted.
6. Assemble tacos with sliced chicken, red onion, cilantro, avocado, and queso fresco.
7. Serve with lime wedges and extra chipotle sauce if desired.
Notes
For a creamy twist, add chipotle mayo or a drizzle of sour cream.
Use chicken breast instead of thighs for a leaner option.
