Description

Comforting, hearty, and unbelievably easy — this Slow Cooker Beef Manhattan turns simple ingredients into a stress-free, diner-style classic. Tender beef roast simmered in savory gravy and served over mashed potatoes and toasted bread makes weeknight dinners feel special without the effort.

Ingredients

Scale

2 lbs beef chuck roast

1 packet onion soup mix

2 cups beef broth

1 tbsp Worcestershire sauce

1/2 tsp black pepper

1/2 tsp garlic powder

2 tbsp cornstarch + 2 tbsp water (for thickening)

8 slices white or sourdough bread, toasted

4 cups mashed potatoes (homemade or store-bought)

Fresh parsley for garnish

Instructions

1. Place beef roast in a slow cooker.

2. Sprinkle onion soup mix, garlic powder, and pepper over the top.

3. Pour in beef broth and Worcestershire sauce.

4. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender and shreds easily.

5. Remove beef and shred with two forks.

6. In a small bowl, mix cornstarch with water to create a slurry.

7. Add the slurry to the slow cooker and stir to thicken the gravy (cook on HIGH for 10–15 minutes).

8. Return shredded beef to the gravy and stir to coat.

9. To serve, place a slice of toasted bread on a plate, top with mashed potatoes, then spoon beef and gravy over the top.

10. Garnish with parsley and enjoy!

Notes

Use leftover roast beef for an even faster version.

Add sautéed onions or mushrooms for extra flavor.

Pairs beautifully with green beans, peas, or a crisp salad.

This slow cooker meal reheats and freezes perfectly — ideal for meal prep!
