Ingredients

1 1/2 cups all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup milk

1/4 cup sour cream

1/2 tsp almond extract (optional)

For the frosting:

1 cup unsalted butter, softened

3 cups powdered sugar

1/4 cup strawberry puree or jam

1 tsp vanilla extract

Pink or red food coloring (optional)

For decoration:

Paper straws cut into small pieces, heart-shaped candy, mini marshmallows or candy arrows


Instructions

1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

2. In a bowl, whisk together flour, baking powder, and salt.

3. In another large bowl, cream butter and sugar until light and fluffy.

4. Add eggs one at a time, then mix in vanilla and almond extract.

5. Alternate adding dry ingredients with milk and sour cream, mixing until smooth.

6. Divide batter evenly among liners (about 2/3 full).

7. Bake for 18–20 minutes, or until a toothpick comes out clean.

8. Cool completely before frosting.

9. For the frosting, beat butter until creamy, then add powdered sugar, strawberry puree, and vanilla.

10. Whip until light and fluffy, tinting with food coloring if desired.

11. Pipe frosting onto cupcakes and decorate with candy arrows made from paper straws and heart candies.

Notes

Add chocolate chips to the cupcake batter for an extra treat.

Use freeze-dried strawberries in the frosting for natural color and flavor.
