These Coffee Cake Scones combine everything you love about classic coffee cake — buttery crumb topping, cinnamon swirl, and tender crumb — with the flaky texture of a scone. They’re a game-changer for breakfast, brunch, or your mid-morning coffee break.
Ingredients
2 cups all-purpose flour
1/3 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup cold unsalted butter, cubed
1/2 cup heavy cream (plus more for brushing)
1 large egg
1 tsp vanilla extract
**Cinnamon Swirl:**
1/3 cup brown sugar
1 tsp cinnamon
1 tbsp melted butter
**Crumb Topping:**
1/4 cup flour
1/4 cup brown sugar
2 tbsp cold butter, cubed
**Glaze (optional):**
1/2 cup powdered sugar
1–2 tsp milk
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
3. Cut in cold butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.
4. In a small bowl, whisk together cream, egg, and vanilla. Add to the flour mixture and stir just until combined.
5. Mix the cinnamon swirl ingredients in a small bowl, then gently fold into the dough for a marbled effect.
6. Turn dough onto a floured surface and shape into a 1-inch thick circle. Cut into 8 wedges and place on the baking sheet.
7. Mix crumb topping ingredients together with a fork until crumbly, then sprinkle generously over the scones.
8. Brush scones with cream and bake for 18–20 minutes, until golden brown.
9. Cool slightly, then drizzle with glaze before serving.
Notes
Freeze unbaked scones for up to a month — bake straight from frozen, adding 3–5 minutes.
Add chopped nuts or mini chocolate chips for a fun variation.
