Ingredients
2 ripe bananas, mashed
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup milk
Instructions
1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
2. In a bowl, whisk together mashed bananas, brown sugar, granulated sugar, melted butter, egg, and vanilla extract.
3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
4. Add dry ingredients to wet ingredients and gently mix until just combined.
5. Stir in milk until batter is smooth.
6. Divide batter evenly among muffin cups.
7. Bake for 18–22 minutes until a toothpick inserted into the center comes out clean.
8. Allow muffins to cool slightly before serving.
Notes
Use very ripe bananas for maximum sweetness.
Do not overmix to keep muffins tender.
