Instructions

  1. Mix the filling: In a large bowl, stir together creamy peanut butter, melted butter, powdered sugar, vanilla extract, and a pinch of sea salt.
  2. Adjust the texture: If the dough is too sticky, add an extra tablespoon of powdered sugar.
  3. Shape the eggs: Scoop 1-2 tablespoons of the mixture and shape it into an oval that resembles an egg. Flatten slightly and place on a lined tray.
  4. Freeze the eggs: Put the tray in the freezer for about 30 minutes to firm them up.
  5. Prepare the chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil, microwaving in intervals until smooth.
  6. Dip the eggs: Take each chilled egg and dip it into the melted chocolate with a fork, tapping off excess.
  7. Set the eggs: Return each coated egg back to the tray.
