Instructions
- Mix the filling: In a large bowl, stir together creamy peanut butter, melted butter, powdered sugar, vanilla extract, and a pinch of sea salt.
- Adjust the texture: If the dough is too sticky, add an extra tablespoon of powdered sugar.
- Shape the eggs: Scoop 1-2 tablespoons of the mixture and shape it into an oval that resembles an egg. Flatten slightly and place on a lined tray.
- Freeze the eggs: Put the tray in the freezer for about 30 minutes to firm them up.
- Prepare the chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil, microwaving in intervals until smooth.
- Dip the eggs: Take each chilled egg and dip it into the melted chocolate with a fork, tapping off excess.
- Set the eggs: Return each coated egg back to the tray.
- Cool the chocolate: Refrigerate for at least 30 minutes to allow the coating to set.
