- 4 chicken breasts
- 1 cup ricotta cheese
- 1/2 cup spinach, chopped
- 1/2 cup mozzarella cheese, shredded
- 2 tablespoons fresh herbs (such as basil or parsley), chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup marinara sauce (optional, for serving)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine ricotta cheese, chopped spinach, shredded mozzarella, and fresh herbs in a large mixing bowl. Season with salt and pepper.
- Slice each chicken breast horizontally to create a pocket.
- Spoon the ricotta mixture into the pockets of the chicken breasts and secure with toothpicks.
- Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken rolls for 3-4 minutes on each side.
- Transfer the seared chicken rolls to a baking dish and bake for 25-30 minutes until cooked through.
- Serve hot, with marinara sauce if desired.
Notes
