Ingredients

  • 4 chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup spinach, chopped
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons fresh herbs (such as basil or parsley), chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup marinara sauce (optional, for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine ricotta cheese, chopped spinach, shredded mozzarella, and fresh herbs in a large mixing bowl. Season with salt and pepper.
  3. Slice each chicken breast horizontally to create a pocket.
  4. Spoon the ricotta mixture into the pockets of the chicken breasts and secure with toothpicks.
  5. Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken rolls for 3-4 minutes on each side.
  6. Transfer the seared chicken rolls to a baking dish and bake for 25-30 minutes until cooked through.
  7. Serve hot, with marinara sauce if desired.
