Description

Moist and flavorful Healthy Banana Muffins made with whole wheat flour, ripe bananas, and optionally dark chocolate chips or nuts.


Ingredients

  • 2 ripe bananas
  • 1/4 cup honey or maple syrup
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup whole wheat flour
  • 1/2 cup dark chocolate chips or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add honey (or maple syrup), melted coconut oil, and vanilla extract to the mashed bananas, mixing well.
  4. Sprinkle in baking soda and salt, mixing thoroughly.
  5. Gradually incorporate whole wheat flour, stirring until just combined.
  6. If using, gently fold in dark chocolate chips or nuts.
  7. Fill each muffin cup about 2/3 full with batter.
  8. Bake for 18 to 20 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For the best flavor, use very ripe bananas. You can also customize the muffins with different mix-ins like nuts or berries.
