Moist and flavorful Healthy Banana Muffins made with whole wheat flour, ripe bananas, and optionally dark chocolate chips or nuts.

- 2 ripe bananas
- 1/4 cup honey or maple syrup
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup whole wheat flour
- 1/2 cup dark chocolate chips or nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners.
- Mash the ripe bananas in a mixing bowl until smooth.
- Add honey (or maple syrup), melted coconut oil, and vanilla extract to the mashed bananas, mixing well.
- Sprinkle in baking soda and salt, mixing thoroughly.
- Gradually incorporate whole wheat flour, stirring until just combined.
- If using, gently fold in dark chocolate chips or nuts.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 18 to 20 minutes, or until a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For the best flavor, use very ripe bananas. You can also customize the muffins with different mix-ins like nuts or berries.
