- 1 lb ground beef
- 1 tablespoon taco seasoning
- 2 sweet potatoes, diced
- 1 cup cottage cheese
- 2–3 tablespoons hot honey
- Salt and pepper to taste
- Olive oil for roasting
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, salt, and pepper in a large bowl, then spread them on a baking sheet in a single layer.
- Roast the sweet potatoes for 25-30 minutes or until fork-tender and slightly crispy.
- Heat a skillet over medium heat, add the ground beef, and cook until browned, breaking it apart as it cooks.
- Drain any excess fat and stir in taco seasoning; mix well and cook for another 2-3 minutes.
- Assemble the bowl with a scoop of roasted sweet potatoes, seasoned ground beef, cottage cheese, and drizzle hot honey over the top.
Notes
Garnish with chopped green onions or fresh cilantro for extra flair. This dish pairs well with a fresh green salad.
