- 4 chicken breasts
- 1 cup orzo pasta
- 1/4 cup lemon juice
- 4 cups chicken broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Fresh herbs (like parsley and dill), chopped
- Salt and pepper to taste
Instructions
- Heat the olive oil over medium heat in a large pot.
- Season the chicken breasts with salt and pepper on both sides, then add to the pot. Cook for about 5-7 minutes on each side until browned.
- Remove the chicken from the pot and set aside.
- Add the minced garlic to the pot and sauté for about 30 seconds.
- Stir in the orzo pasta and cook for 2-3 minutes until lightly toasted.
- Pour in the chicken broth and lemon juice, stirring to combine and bring to a boil.
- Return the chicken to the pot, reduce heat to low, cover, and simmer for 15-20 minutes until the orzo is tender.
- Stir in the chopped fresh herbs just before serving.
Notes
For a richer flavor, marinate the chicken in olive oil, lemon juice, and herbs. Chicken can be substituted with chickpeas for a vegetarian version.
