Description

Ingredients

  • 4 chicken breasts
  • 1 cup orzo pasta
  • 1/4 cup lemon juice
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Fresh herbs (like parsley and dill), chopped
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Season the chicken breasts with salt and pepper on both sides, then add to the pot. Cook for about 5-7 minutes on each side until browned.
  3. Remove the chicken from the pot and set aside.
  4. Add the minced garlic to the pot and sauté for about 30 seconds.
  5. Stir in the orzo pasta and cook for 2-3 minutes until lightly toasted.
  6. Pour in the chicken broth and lemon juice, stirring to combine and bring to a boil.
  7. Return the chicken to the pot, reduce heat to low, cover, and simmer for 15-20 minutes until the orzo is tender.
  8. Stir in the chopped fresh herbs just before serving.

Notes

For a richer flavor, marinate the chicken in olive oil, lemon juice, and herbs. Chicken can be substituted with chickpeas for a vegetarian version.
