Description

A hearty and nostalgic casserole that combines creamy cheese, savory chicken, and mixed vegetables, perfect for busy weeknights or family gatherings.


Ingredients

Scale
  • 2 cups uncooked macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 can cream of mushroom soup
  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)
  • 2 tablespoons butter (if using breadcrumbs)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring water to a boil. Once boiling, add the uncooked macaroni and cook according to package instructions. Drain and set aside.
  3. In a large mixing bowl, combine the cooked macaroni, shredded chicken, frozen mixed vegetables, cream of mushroom soup, milk, garlic powder, and half of the cheese. Season with salt and pepper.
  4. Pour the macaroni mixture into a greased 9×13 inch casserole dish, spreading it evenly.
  5. If using breadcrumbs, melt the butter and mix it with the breadcrumbs. Sprinkle this mixture on top of the casserole, and add the remaining cheese on top.
  6. Bake for 25-30 minutes, or until hot and bubbly, and cheese is melted and golden.
  7. Allow to cool for 5-10 minutes before serving.

Notes

Serve with a fresh green salad or crusty bread. For added flavor, sprinkle fresh herbs like parsley or chives on top before serving.
