Description

A delicious twist on the classic grilled cheese, featuring creamy gouda, roasted mushrooms, and savory onions.


Ingredients

  • 2 slices sourdough bread
  • 2 slices gouda cheese
  • 1 cup mushrooms, sliced
  • 1 onion, sliced
  • 1 tablespoon butter
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the mushrooms and onion.
  3. Toss the mushrooms and onion with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 15-20 minutes.
  4. Spread butter on one side of each slice of sourdough bread.
  5. Place one slice of bread, butter-side down, in a skillet over medium heat.
  6. Layer with gouda cheese, followed by the roasted mushrooms and onions, then top with another slice of bread, butter-side up.
  7. Grill for 3-4 minutes on each side, or until golden brown and the cheese is melted.
  8. Serve warm.

Notes

For a vegan option, use plant-based butter and cheese alternatives.
