A delicious twist on the classic grilled cheese, featuring creamy gouda, roasted mushrooms, and savory onions.

- 2 slices sourdough bread
- 2 slices gouda cheese
- 1 cup mushrooms, sliced
- 1 onion, sliced
- 1 tablespoon butter
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the mushrooms and onion.
- Toss the mushrooms and onion with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 15-20 minutes.
- Spread butter on one side of each slice of sourdough bread.
- Place one slice of bread, butter-side down, in a skillet over medium heat.
- Layer with gouda cheese, followed by the roasted mushrooms and onions, then top with another slice of bread, butter-side up.
- Grill for 3-4 minutes on each side, or until golden brown and the cheese is melted.
- Serve warm.
