- 1 cup cottage cheese
- 1/2 cup unsweetened cocoa powder
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- Blend the cottage cheese, cocoa powder, honey or maple syrup, coconut oil, vanilla extract, and eggs in a blender until smooth.
- Mix the almond flour, baking powder, and salt in a separate bowl until combined.
- Combine the wet mixture with the dry ingredients and stir until fully combined.
- Transfer the batter into the prepared baking pan, spreading it evenly.
- Bake for 25-30 minutes until a toothpick comes out mostly clean.
- Cool in the pan, then cut into squares before serving.
Notes
For creamier brownies, use full-fat cottage cheese. Don’t overmix and let brownies cool completely for neat edges.
