Description

Deliciously fudgy and rich brownies made with cottage cheese for added moisture and protein, perfect for gluten-free dessert lovers.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Blend the cottage cheese, cocoa powder, honey or maple syrup, coconut oil, vanilla extract, and eggs in a blender until smooth.
  3. Mix the almond flour, baking powder, and salt in a separate bowl until combined.
  4. Combine the wet mixture with the dry ingredients and stir until fully combined.
  5. Transfer the batter into the prepared baking pan, spreading it evenly.
  6. Bake for 25-30 minutes until a toothpick comes out mostly clean.
  7. Cool in the pan, then cut into squares before serving.

Notes

For creamier brownies, use full-fat cottage cheese. Don’t overmix and let brownies cool completely for neat edges.
