Description

Delightful cookies that combine the natural sweetness of bananas with oats and nuts, perfect for a healthy snack or breakfast.


Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup chocolate chips
  • 1/4 cup walnuts, chopped
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Add rolled oats, almond flour, maple syrup, vanilla extract, baking soda, and salt. Stir until combined.
  4. Fold in chocolate chips and chopped walnuts.
  5. Line a baking sheet with parchment paper.
  6. Scoop spoonfuls of cookie dough onto the baking sheet, leaving space between each.
  7. Bake for 12-15 minutes until edges are golden brown.
  8. Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas for the best flavor; feel free to substitute walnuts with pecans or omit them. Adjust spices and chips to your liking.
