- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/2 cup chocolate chips
- 1/4 cup walnuts, chopped
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add rolled oats, almond flour, maple syrup, vanilla extract, baking soda, and salt. Stir until combined.
- Fold in chocolate chips and chopped walnuts.
- Line a baking sheet with parchment paper.
- Scoop spoonfuls of cookie dough onto the baking sheet, leaving space between each.
- Bake for 12-15 minutes until edges are golden brown.
- Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Use ripe bananas for the best flavor; feel free to substitute walnuts with pecans or omit them. Adjust spices and chips to your liking.
