- 2 pounds ground beef or ground meat of choice
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/2 cup milk
- 2 large eggs
- Salt and pepper to taste
- 1/2 cup ketchup
- 1/4 cup mayonnaise
- 1 tablespoon minced garlic
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the ground meat, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, milk, eggs, salt, and pepper in a large bowl.
- Shape the meat mixture into a loaf and place it in a greased baking dish.
- Mix together the ketchup, mayonnaise, and minced garlic to make the sauce; spread half over the meatloaf.
- Bake for 60-75 minutes until cooked through with an internal temperature of 160°F (70°C).
- Let the meatloaf rest for 10 minutes before slicing.
Notes
Pair with mashed potatoes or green beans for a complete meal. Leftovers can be used in sandwiches.
