Instructions
- Sear the beef: Begin by melting 1 tablespoon of butter in a skillet over medium heat. Once the butter is hot, add the bite-sized beef pieces. Sauté them until they are nicely browned on all sides, about 5 minutes.
- Transfer the seared beef into your slow cooker. Spread the beef out evenly to ensure proper cooking.
- Add the halved potatoes, layering them gently over the beef.
- Whisk together the melted butter, minced garlic, smoked paprika, Worcestershire sauce, beef broth, and Dijon mustard until well combined.
- Drizzle the garlic butter mixture evenly over the beef and potatoes. Season generously with salt, pepper, and Italian seasoning.
- Set your slow cooker to low and let it cook for 7 to 8 hours, or on high for 4 hours.
- Broil the dish on high for about 2 to 3 minutes for an extra touch of crispness, if desired.
