Delightful homemade Funfetti Cupcakes that are colorful and perfect for any celebration.

- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 1/4 tsp baking powder
- 3/4 cup granulated sugar
- 1/2 tsp kosher salt
- 3 cups powdered sugar
- 1/3 cup rainbow sprinkles
- 4 1/2 tsp vanilla extract
- 1 1/4 cup unsalted butter, softened
- 1/4 cup milk
- 1/2 cup whole milk
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time and mix well, then mix in the vanilla extract.
- Mix the all-purpose flour, baking powder, and kosher salt in another bowl.
- Combine the dry mixture with the wet mixture, alternating with the whole milk until just combined.
- Fold in the rainbow sprinkles gently.
- Portion the batter evenly among the cupcake liners, filling them about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool the cupcakes in the pan for a few minutes, then transfer to a wire rack to cool completely.
- Prepare frosting by beating powdered sugar and softened butter, then add vanilla and milk until the desired consistency is reached.
- Frost and decorate the cooled cupcakes with frosting and extra sprinkles.
Notes
Store cupcakes in an airtight container. Frosted ones should be kept in the fridge.
