Description

Delightful homemade Funfetti Cupcakes that are colorful and perfect for any celebration.


Ingredients

  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/2 tsp kosher salt
  • 3 cups powdered sugar
  • 1/3 cup rainbow sprinkles
  • 4 1/2 tsp vanilla extract
  • 1 1/4 cup unsalted butter, softened
  • 1/4 cup milk
  • 1/2 cup whole milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time and mix well, then mix in the vanilla extract.
  4. Mix the all-purpose flour, baking powder, and kosher salt in another bowl.
  5. Combine the dry mixture with the wet mixture, alternating with the whole milk until just combined.
  6. Fold in the rainbow sprinkles gently.
  7. Portion the batter evenly among the cupcake liners, filling them about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool the cupcakes in the pan for a few minutes, then transfer to a wire rack to cool completely.
  10. Prepare frosting by beating powdered sugar and softened butter, then add vanilla and milk until the desired consistency is reached.
  11. Frost and decorate the cooled cupcakes with frosting and extra sprinkles.

Notes

Store cupcakes in an airtight container. Frosted ones should be kept in the fridge.
