Description

A delightful blend of tender shrimp, fresh vegetables, and creamy dressing that captures the essence of a classic New York deli.


Ingredients

  • 1 lb shrimp (fresh, peeled and deveined)
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp Old Bay seasoning
  • 8 cups water
  • 1 tbsp fresh lemon juice
  • 1/2 cup celery (diced)
  • 1/4 cup red onion (diced)
  • 1/4 cup fresh dill (minced)
  • 1/2 cup mayonnaise
  • 1 tsp celery seed (optional)
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the shrimp: In a large bowl, toss the shrimp with baking soda, kosher salt, and Old Bay seasoning. Allow to soak for 15-20 minutes.
  2. Set up an ice bath: Fill another bowl with ice water and set aside.
  3. Poach the shrimp: Bring 8 cups of water with lemon juice to a boil. Add the shrimp and cook for about 90 seconds.
  4. Chill the shrimp: Transfer the shrimp to the ice water bath to cool for a few minutes.
  5. Drain and dry: Drain in a colander and pat dry with paper towels.
  6. Mix the dressing: In a bowl, combine diced celery, red onion, dill, mayonnaise, celery seed, and lemon juice. Season to taste.
  7. Combine and chill: Add the shrimp to the dressing and gently toss. Cover and refrigerate for at least 2 hours.
  8. Final touch: Drain excess dressing if desired before serving.
