- 1 lb shrimp (fresh, peeled and deveined)
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1 tsp Old Bay seasoning
- 8 cups water
- 1 tbsp fresh lemon juice
- 1/2 cup celery (diced)
- 1/4 cup red onion (diced)
- 1/4 cup fresh dill (minced)
- 1/2 cup mayonnaise
- 1 tsp celery seed (optional)
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- Prepare the shrimp: In a large bowl, toss the shrimp with baking soda, kosher salt, and Old Bay seasoning. Allow to soak for 15-20 minutes.
- Set up an ice bath: Fill another bowl with ice water and set aside.
- Poach the shrimp: Bring 8 cups of water with lemon juice to a boil. Add the shrimp and cook for about 90 seconds.
- Chill the shrimp: Transfer the shrimp to the ice water bath to cool for a few minutes.
- Drain and dry: Drain in a colander and pat dry with paper towels.
- Mix the dressing: In a bowl, combine diced celery, red onion, dill, mayonnaise, celery seed, and lemon juice. Season to taste.
- Combine and chill: Add the shrimp to the dressing and gently toss. Cover and refrigerate for at least 2 hours.
- Final touch: Drain excess dressing if desired before serving.
