Description

Delightful muffins combining savory sausage, scrambled eggs, and sweet maple syrup, perfect for busy mornings.


Ingredients

  • 2 cups Pancake Mix
  • 1 cup Water
  • 1/4 cup Maple Syrup
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 lb Breakfast Sausage
  • 1 cup Shredded Cheddar Cheese
  • 4 large Eggs

Instructions

  1. Preheat the oven to 350°F and grease a muffin tin.
  2. Combine the pancake mix, water, maple syrup, salt, and pepper in a large bowl. Stir gently until just blended.
  3. Heat a skillet over medium heat and crumble the breakfast sausage.
  4. Cook until browned and sizzling, about 5-7 minutes.
  5. Fold the cooked sausage and scrambled eggs into the pancake batter.
  6. Allow the mixture to rest for about 5 minutes.
  7. Divide the batter into the prepared muffin tin, filling each cup about 3/4 full.
  8. Bake for 15-18 minutes, or until golden brown.
  9. Remove from the oven and cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

For enhanced flavor, serve with extra maple syrup or honey. These muffins can also be frozen for up to three months.
