- 2 cups Pancake Mix
- 1 cup Water
- 1/4 cup Maple Syrup
- 1 tsp Salt
- 1 tsp Pepper
- 1 lb Breakfast Sausage
- 1 cup Shredded Cheddar Cheese
- 4 large Eggs
Instructions
- Preheat the oven to 350°F and grease a muffin tin.
- Combine the pancake mix, water, maple syrup, salt, and pepper in a large bowl. Stir gently until just blended.
- Heat a skillet over medium heat and crumble the breakfast sausage.
- Cook until browned and sizzling, about 5-7 minutes.
- Fold the cooked sausage and scrambled eggs into the pancake batter.
- Allow the mixture to rest for about 5 minutes.
- Divide the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 15-18 minutes, or until golden brown.
- Remove from the oven and cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
Notes
For enhanced flavor, serve with extra maple syrup or honey. These muffins can also be frozen for up to three months.
