- 1 medium butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon olive oil
- Salt and pepper to taste

Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté for about 3–5 minutes until softened.
- Add the cubed butternut squash to the pot and pour in the vegetable broth. Stir well and bring to a boil.
- Once boiling, reduce the heat and let the soup simmer for about 20 minutes until the squash is tender.
- Blend the soup until smooth using an immersion blender or a countertop blender.
- Return the blended soup to the pot, season with salt and pepper to taste, and let the flavors meld for a few minutes before serving.
Notes
For added creaminess, consider adding a splash of coconut milk or heavy cream. You can customize the flavor by adding spices like nutmeg or cayenne.
