Description
A comfort food classic combining seasoned ground beef, mixed vegetables, and creamy mashed potatoes topped with cheese.
Ingredients
Scale
- 1.5 lbs lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1.5 cups frozen mixed vegetables
- 2 tbsp all-purpose flour
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried parsley
- 2 lbs potatoes (Russet or Yukon Gold), peeled and cubed
- 4 tbsp butter
- 0.25 cup milk
- 1 cup sharp cheddar cheese, shredded
- Salt and pepper to taste
Instructions
- Boil the peeled and cubed potatoes in a large pot of salted water for about 15 minutes or until they are very soft.
- Drain the potatoes and return them to the pot. Add 4 tablespoons of butter, 0.25 cup of milk, and half of the shredded cheddar cheese. Mash until creamy.
- Heat a large skillet over medium-high heat and brown the ground beef with the chopped onion until the beef is no longer pink.
- Draining excess grease, stir in the minced garlic and cook for an additional minute.
- Sprinkle the flour over the beef mixture and stir for 1 minute.
- Gradually pour in the beef broth and Worcestershire sauce while stirring. Stir in the frozen mixed vegetables and dried parsley. Simmer for about 5-7 minutes.
- Preheat your oven to 400°F (200°C).
- Transfer the beef mixture to a 9×9-inch baking dish.
- Spread the mashed potatoes over the beef mixture and smooth it out.
- Sprinkle the remaining cheddar cheese on top.
- Bake for about 20 minutes, until the cheese is melted and golden brown.
