Description

A comfort food classic combining seasoned ground beef, mixed vegetables, and creamy mashed potatoes topped with cheese.


Ingredients

  • 1.5 lbs lean ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1.5 cups frozen mixed vegetables
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried parsley
  • 2 lbs potatoes (Russet or Yukon Gold), peeled and cubed
  • 4 tbsp butter
  • 0.25 cup milk
  • 1 cup sharp cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Boil the peeled and cubed potatoes in a large pot of salted water for about 15 minutes or until they are very soft.
  2. Drain the potatoes and return them to the pot. Add 4 tablespoons of butter, 0.25 cup of milk, and half of the shredded cheddar cheese. Mash until creamy.
  3. Heat a large skillet over medium-high heat and brown the ground beef with the chopped onion until the beef is no longer pink.
  4. Draining excess grease, stir in the minced garlic and cook for an additional minute.
  5. Sprinkle the flour over the beef mixture and stir for 1 minute.
  6. Gradually pour in the beef broth and Worcestershire sauce while stirring. Stir in the frozen mixed vegetables and dried parsley. Simmer for about 5-7 minutes.
  7. Preheat your oven to 400°F (200°C).
  8. Transfer the beef mixture to a 9×9-inch baking dish.
  9. Spread the mashed potatoes over the beef mixture and smooth it out.
  10. Sprinkle the remaining cheddar cheese on top.
  11. Bake for about 20 minutes, until the cheese is melted and golden brown.

Notes

Customize the ingredients according to your family’s taste; for vegetarian options, replace beef with lentils or meat substitutes.
