Description

A light and refreshing pasta salad packed with Mediterranean flavors, perfect for picnics and quick lunches.


Ingredients

  • 8 oz bowtie pasta
  • 1 cup cucumbers, chopped
  • 1/2 cup Kalamata olives, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp oregano
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the pasta according to package instructions until al dente, about 7 to 10 minutes. Drain and let cool.
  2. Combine the cooled pasta with cucumbers, Kalamata olives, cherry tomatoes, red onion, and feta cheese in a large bowl.
  3. Make the dressing by whisking together olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  4. Pour the dressing over the salad and toss gently to coat all ingredients.
  5. Chill in the refrigerator for about 30 minutes before serving to enhance flavor.

Notes

Best served chilled. Can add proteins like chicken or shrimp for a more filling meal.
