- 3 cups cooked chicken
- 2 cloves garlic, minced
- 1/2 tsp garlic powder
- 1 medium potato, diced
- 1/2 tsp dried thyme
- 1 small yellow onion, diced
- 2 cups chicken broth
- 1 tbsp baking powder
- 1/2 tsp black pepper
- 1 1/3 cups flour
- 1 1/2 tsp salt
- 6 tbsp unsalted butter
- 1/2 cup cheddar cheese, shredded
- 1 2/3 cups whole milk
- 2 cups frozen mixed vegetables
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté the garlic, onion, and potato until softened, about 5-7 minutes.
- Add the chicken, frozen vegetables, chicken broth, thyme, salt, and pepper, and simmer for 5 minutes.
- Prepare the topping by mixing flour, baking powder, salt, and garlic powder, then cutting in butter until crumbly. Stir in milk and cheese.
- Combine the chicken mixture in a greased baking dish and drop spoonfuls of the batter on top.
- Bake for 30-35 minutes until the topping is golden brown.
- Serve warm and enjoy!
Notes
For a delightful touch, garnish with fresh herbs. Can be made ahead and stored in the refrigerator for 3-4 days.
