Description

Ingredients

  • 3 cups cooked chicken
  • 2 cloves garlic, minced
  • 1/2 tsp garlic powder
  • 1 medium potato, diced
  • 1/2 tsp dried thyme
  • 1 small yellow onion, diced
  • 2 cups chicken broth
  • 1 tbsp baking powder
  • 1/2 tsp black pepper
  • 1 1/3 cups flour
  • 1 1/2 tsp salt
  • 6 tbsp unsalted butter
  • 1/2 cup cheddar cheese, shredded
  • 1 2/3 cups whole milk
  • 2 cups frozen mixed vegetables

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the garlic, onion, and potato until softened, about 5-7 minutes.
  3. Add the chicken, frozen vegetables, chicken broth, thyme, salt, and pepper, and simmer for 5 minutes.
  4. Prepare the topping by mixing flour, baking powder, salt, and garlic powder, then cutting in butter until crumbly. Stir in milk and cheese.
  5. Combine the chicken mixture in a greased baking dish and drop spoonfuls of the batter on top.
  6. Bake for 30-35 minutes until the topping is golden brown.
  7. Serve warm and enjoy!
