Description

Quick and delicious beef tacos that are perfect for busy weeknights. Customize them to suit your taste!


Ingredients

  • 1 pound of ground beef
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 can (15 ounces) of black beans, drained and rinsed
  • 1 can (15 ounces) of corn, drained
  • 1 can (14.5 ounces) of diced tomatoes
  • 1 packet of taco seasoning
  • 1 cup of shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Tortilla chips or taco shells for serving

Instructions

  1. Cook the beef: In a large skillet, over medium heat, add the ground beef. Break it up with a spatula as it cooks. Season it with a pinch of salt and pepper. Cook until it is browned, about 5-7 minutes.
  2. Add onion and garlic: Once the beef is browned, add the chopped onion and minced garlic to the skillet. Cook for about 3-4 minutes until the onion is translucent and fragrant.
  3. Mix in the beans and corn: Stir in the drained black beans and corn. Mix well to combine all the ingredients.
  4. Add tomatoes and seasoning: Pour in the diced tomatoes and sprinkle the taco seasoning. Stir everything together.
  5. Simmer: Lower the heat and let the mixture simmer for about 10 minutes, stirring occasionally, until flavors meld.
  6. Add cheese: Turn off the heat and sprinkle the shredded cheese on top. Cover the skillet to melt the cheese.
  7. Garnish: Once the cheese is melted, remove the cover and garnish with cilantro, if using.
  8. Serve: Spoon the mixture into taco shells or serve with tortilla chips. Enjoy!
