Ingredients

- 1 pound of ground beef
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 can (15 ounces) of black beans, drained and rinsed
- 1 can (15 ounces) of corn, drained
- 1 can (14.5 ounces) of diced tomatoes
- 1 packet of taco seasoning
- 1 cup of shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- Tortilla chips or taco shells for serving
Instructions
- Cook the beef: In a large skillet, over medium heat, add the ground beef. Break it up with a spatula as it cooks. Season it with a pinch of salt and pepper. Cook until it is browned, about 5-7 minutes.
- Add onion and garlic: Once the beef is browned, add the chopped onion and minced garlic to the skillet. Cook for about 3-4 minutes until the onion is translucent and fragrant.
- Mix in the beans and corn: Stir in the drained black beans and corn. Mix well to combine all the ingredients.
- Add tomatoes and seasoning: Pour in the diced tomatoes and sprinkle the taco seasoning. Stir everything together.
- Simmer: Lower the heat and let the mixture simmer for about 10 minutes, stirring occasionally, until flavors meld.
- Add cheese: Turn off the heat and sprinkle the shredded cheese on top. Cover the skillet to melt the cheese.
- Garnish: Once the cheese is melted, remove the cover and garnish with cilantro, if using.
- Serve: Spoon the mixture into taco shells or serve with tortilla chips. Enjoy!
