Description

A hearty and comforting shepherd’s pie made with tender ground beef, flavorful vegetables, and creamy mashed potatoes, all baked to golden perfection.


Ingredients

Scale
  • 1.5 lbs ground beef (or lamb)
  • 1 large onion, diced
  • 3 carrots, sliced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • 1.5 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp butter
  • 0.5 cup sour cream
  • 0.5 cup shredded Parmesan or white cheddar
  • Salt and pepper to taste

Instructions

  1. Prepare the potatoes by boiling the cubed Yukon Gold potatoes in a large pot of salted water for about 15 minutes until fork-tender.
  2. Drain the water and return the potatoes to the pot. Add the butter, sour cream, and half of the shredded cheese; mash until smooth.
  3. Season with salt and pepper to taste.
  4. Preheat your Dutch oven over medium-high heat and add the ground beef (or lamb). Cook until browned, breaking apart the meat.
  5. Drain excess fat from the pot.
  6. Add the diced onion and sliced carrots, cooking for about 5-7 minutes until softened.
  7. Stir in the minced garlic, tomato paste, and flour; cook for another 2 minutes.
  8. Gradually whisk in the beef broth and Worcestershire sauce; add thyme and simmer for 5-10 minutes until thickened.
  9. Stir in the frozen peas, heating through for a couple of minutes.
  10. Remove from heat and spread creamy mashed potatoes over the mixture, sealing the edges.
  11. Sprinkle the remaining cheese on top and preheat the oven to 400°F (200°C).
  12. Bake uncovered for 20 minutes until golden and bubbling.
  13. Let it rest for about 5-10 minutes before serving.

Notes

Serve directly from the Dutch oven for a rustic presentation. Pairs well with a side salad or crusty bread.
