Instructions

  1. Prepare for Baking: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Mix Dry Ingredients: Whisk together flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl.
  3. Mix Wet Ingredients: In a large bowl, combine vegetable oil and granulated sugar, then add egg, vanilla extract, and buttermilk.
  4. Add Coffee: Pour freshly brewed coffee or boiling water into the wet mixture and stir gently.
  5. Combine Dry and Wet Ingredients: Slowly add dry mixture to wet ingredients and mix until just combined.
  6. Fill the Muffin Tin: Fill cupcake liners about 2/3 full with batter.
  7. Bake the Cupcakes: Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool the Cupcakes: Let them cool in the tin for 10 minutes, then transfer to a wire rack.
  9. Make the Chocolate Frosting: Beat softened butter, gradually adding sifted powdered sugar and cocoa. Add milk until desired consistency is reached.
