Description

Crispy on the outside and cheesy on the inside, these corn fritters make a delightful snack or appetizer.


Ingredients

  • 1 cup fresh or canned corn (drained if using canned)
  • 1/2 cup all-purpose flour
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 2 eggs
  • 1 green onion, finely chopped
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying (vegetable or canola)

Instructions

  1. Prep your corn by cutting it off the cob if using fresh, or draining if using canned.
  2. Chop the green onion finely.
  3. In a mixing bowl, combine flour, baking powder, garlic powder, salt, and pepper.
  4. In another bowl, beat the eggs and then mix in corn, cheese, and green onion.
  5. Combine wet and dry ingredients gently without overmixing.
  6. Heat oil in a skillet over medium heat.
  7. Drop spoonfuls of batter into the hot oil, flattening slightly.
  8. Fry each side for 3-4 minutes or until golden brown.
  9. Remove fritters and drain on paper towels.
  10. Serve warm with a dipping sauce.
