- 1 cup fresh or canned corn (drained if using canned)
- 1/2 cup all-purpose flour
- 1/2 cup shredded cheese (cheddar or your choice)
- 2 eggs
- 1 green onion, finely chopped
- 1/2 teaspoon baking powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Oil for frying (vegetable or canola)
Instructions
- Prep your corn by cutting it off the cob if using fresh, or draining if using canned.
- Chop the green onion finely.
- In a mixing bowl, combine flour, baking powder, garlic powder, salt, and pepper.
- In another bowl, beat the eggs and then mix in corn, cheese, and green onion.
- Combine wet and dry ingredients gently without overmixing.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of batter into the hot oil, flattening slightly.
- Fry each side for 3-4 minutes or until golden brown.
- Remove fritters and drain on paper towels.
- Serve warm with a dipping sauce.
