Ingredients

- 2 cups mashed potatoes
- 1 cup chopped kale or cabbage
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup green onions, chopped
- 1/2 cup flour
- 2 eggs
- Salt and pepper to taste
- Oil for frying
Instructions
- Combine the mashed potatoes, chopped kale or cabbage, shredded cheese, green onions, flour, eggs, salt, and pepper in a large bowl.
- Heat oil in a frying pan over medium heat until it shimmers.
- Scoop tablespoon-sized portions of the mixture and roll them into small balls.
- Place the balls in the hot oil, frying for 3-4 minutes on each side until golden brown.
- Remove from oil using a slotted spoon and allow excess oil to drain on paper towels. Serve hot.
Notes
For a baked version, preheat oven to 400°F (200°C) and bake puffs for 20-25 minutes.
