Description

Delightful crispy puffs filled with mashed potatoes, kale, cheese, and onions, perfect as a snack or side dish.


Ingredients

Scale
  • 2 cups mashed potatoes
  • 1 cup chopped kale or cabbage
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup green onions, chopped
  • 1/2 cup flour
  • 2 eggs
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Combine the mashed potatoes, chopped kale or cabbage, shredded cheese, green onions, flour, eggs, salt, and pepper in a large bowl.
  2. Heat oil in a frying pan over medium heat until it shimmers.
  3. Scoop tablespoon-sized portions of the mixture and roll them into small balls.
  4. Place the balls in the hot oil, frying for 3-4 minutes on each side until golden brown.
  5. Remove from oil using a slotted spoon and allow excess oil to drain on paper towels. Serve hot.

Notes

For a baked version, preheat oven to 400°F (200°C) and bake puffs for 20-25 minutes.
