Description

A hearty and flavorful meal that combines steak, linguine, and roasted carrots in a rich cowboy butter sauce.


Ingredients

  • 12 oz linguine
  • 1 lb steak (sirloin or ribeye), cut into bite-sized pieces
  • 2 cups carrots, sliced into thin sticks or coins
  • 3 tbsp olive oil (divided)
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp crushed red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss carrot slices with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on a baking sheet.
  3. Roast the carrots in the preheated oven for 15–20 minutes, checking after 15 minutes.
  4. Meanwhile, boil a large pot of salted water and cook the linguine according to package directions. Drain and set aside.
  5. Heat 1 tablespoon of olive oil in a large skillet. Season steak pieces with salt, black pepper, paprika, garlic powder, and onion powder. Sear for 2–3 minutes on each side.
  6. Remove the cooked steak from the skillet and set aside.
  7. In the same skillet, add the remaining olive oil and butter. Allow the butter to melt, then add minced garlic and cook for about 1 minute.
  8. Stir in lemon juice, Dijon mustard, and crushed red pepper flakes if using.
  9. Add the drained linguine to the skillet, tossing to coat in the sauce. Return steak and roasted carrots, mixing gently.
  10. Sprinkle with grated Parmesan cheese and chopped parsley. Adjust seasoning with salt and pepper.
  11. Serve hot and enjoy!

Notes

Best served immediately. Pair with a simple green salad or garlic bread.
