A hearty and flavorful meal that combines steak, linguine, and roasted carrots in a rich cowboy butter sauce.

- 12 oz linguine
- 1 lb steak (sirloin or ribeye), cut into bite-sized pieces
- 2 cups carrots, sliced into thin sticks or coins
- 3 tbsp olive oil (divided)
- 4 tbsp butter
- 4 cloves garlic, minced
- 1 tbsp lemon juice
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp crushed red pepper flakes (optional)
- 1 tsp Dijon mustard
- Salt and black pepper, to taste
- ½ cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Toss carrot slices with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on a baking sheet.
- Roast the carrots in the preheated oven for 15–20 minutes, checking after 15 minutes.
- Meanwhile, boil a large pot of salted water and cook the linguine according to package directions. Drain and set aside.
- Heat 1 tablespoon of olive oil in a large skillet. Season steak pieces with salt, black pepper, paprika, garlic powder, and onion powder. Sear for 2–3 minutes on each side.
- Remove the cooked steak from the skillet and set aside.
- In the same skillet, add the remaining olive oil and butter. Allow the butter to melt, then add minced garlic and cook for about 1 minute.
- Stir in lemon juice, Dijon mustard, and crushed red pepper flakes if using.
- Add the drained linguine to the skillet, tossing to coat in the sauce. Return steak and roasted carrots, mixing gently.
- Sprinkle with grated Parmesan cheese and chopped parsley. Adjust seasoning with salt and pepper.
- Serve hot and enjoy!

Best served immediately. Pair with a simple green salad or garlic bread.
