Description
A delicious pasta dish that combines creamy flavors with a spicy kick, perfect for any day of the week.
Ingredients
Scale
- 8 oz pasta (e.g., penne or spaghetti)
- 1 lb chicken breasts, diced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2–3 tablespoons chipotle in adobo sauce, minced
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. When finished, drain the pasta and set it aside.
- Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until it turns golden and is cooked through, about 7-10 minutes. Stir occasionally to ensure even cooking.
- Add Garlic: Once the chicken is done, add the minced garlic to the skillet. Sauté for about 1 minute until the garlic becomes fragrant.
- Make the Sauce: Stir in the chipotle in adobo sauce, chicken broth, and heavy cream. Allow the mixture to come to a gentle simmer. Let it cook for approximately 5 minutes, stirring occasionally.
- Add Cheese: Once simmered, add the grated Parmesan cheese to the skillet. Stir until the cheese melts and the sauce becomes creamy and smooth.
- Combine with Pasta: Toss the cooked pasta in the skillet with the sauce. Ensure all the pasta is well coated with the creamy sauce.
- Season: Season with salt and pepper to taste.
- Serve: Serve hot, garnished with fresh parsley for a pop of color.
