Description

A delicious pasta dish that combines creamy flavors with a spicy kick, perfect for any day of the week.

Ingredients

Scale
  • 8 oz pasta (e.g., penne or spaghetti)
  • 1 lb chicken breasts, diced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 23 tablespoons chipotle in adobo sauce, minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. When finished, drain the pasta and set it aside.
  2. Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until it turns golden and is cooked through, about 7-10 minutes. Stir occasionally to ensure even cooking.
  3. Add Garlic: Once the chicken is done, add the minced garlic to the skillet. Sauté for about 1 minute until the garlic becomes fragrant.
  4. Make the Sauce: Stir in the chipotle in adobo sauce, chicken broth, and heavy cream. Allow the mixture to come to a gentle simmer. Let it cook for approximately 5 minutes, stirring occasionally.
  5. Add Cheese: Once simmered, add the grated Parmesan cheese to the skillet. Stir until the cheese melts and the sauce becomes creamy and smooth.
  6. Combine with Pasta: Toss the cooked pasta in the skillet with the sauce. Ensure all the pasta is well coated with the creamy sauce.
  7. Season: Season with salt and pepper to taste.
  8. Serve: Serve hot, garnished with fresh parsley for a pop of color.

Notes

For added richness, you can adjust the spice level and include your favorite vegetables.
