A fantastic and simple recipe combining the earthiness of cremini mushrooms with vibrant broccoli in a creamy finish. Perfect for busy weeknights.
Ingredients
Scale
- 8 ounces Cremini Mushrooms (sliced)
- 4 cups Broccoli (cut into florets)
- 2 cloves Garlic (minced)
- 1 tablespoon Fresh Thyme Leaves (or substitute with dried thyme)
- 1 tablespoon Lemon Juice (or lime juice as a substitute)
- 2 tablespoons Olive Oil (for sautéing)
- to taste Salt (for seasoning)
- to taste Freshly Ground Black Pepper (for seasoning)
- 1 pinch Red Pepper Flakes (for a kick of heat)
- 1/4 cup Crème Fraîche or Sour Cream (for a creamy finish)
- optional Soy Sauce, Honey, and Sesame Oil (for an Asian-inspired flavor)
- as needed Fresh Herbs (Parsley, Chives, Oregano) (for garnish)
Instructions
- Warm Olive Oil: To start, take a large skillet and add 2 tablespoons of olive oil. Heat it over medium heat until it starts to shimmer, which should take about a minute or two.
- Cook the Garlic: Next, add the 2 minced cloves of garlic to the hot oil. Stir the garlic and let it cook for about 1 minute. You want it to become fragrant and golden but not too brown, as overcooking can create a bitter taste.
- Add Mushrooms: Now it’s time to toss in the 8 ounces of sliced cremini mushrooms. Stir them well in the skillet, allowing them to cook for about 5 minutes. They will soften and start releasing their delicious juices, which is exactly what you want.
- Incorporate the Broccoli: After your mushrooms are nicely cooked, pour in 4 cups of broccoli florets. Stir them into the mixture and let them cook for an additional 4 minutes. You want the broccoli to be tender but still bright green and crisp.
- Season the Dish: At this stage, sprinkle some salt and freshly ground black pepper to taste. Add a pinch of red pepper flakes for a bit of spice to kick it up a notch.
- Add Lemon Juice and Thyme: Drizzle 1 tablespoon of lemon juice over the sautéed mixture. Follow it up with the 1 tablespoon of fresh thyme leaves. Stir everything well to get those wonderful flavors combined.
- Make it Creamy: Gently fold in 1/4 cup of crème fraîche or sour cream. This is what gives the dish its creamy finish, making it extra comforting.
- Optional Asian Twist: If you’re feeling adventurous, you can transform this dish into an Asian-inspired version. Add soy sauce, honey, and a dash of sesame oil as desired. This will give your dish a whole new flavor profile.
- Garnish and Serve: Before serving, sprinkle some fresh herbs, like parsley or chives, on top. This adds a pop of color and freshness to your dish, making it even more appetizing.
Notes
Choose fresh vegetables for the best flavor. You can adjust the creaminess by using vegetable broth for a lighter version.
