Description

A delightful low-carb dish featuring creamy sauce, tender chicken, and vibrant vegetables, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breasts (boneless and skinless)
  • 2 cups broccoli (chopped)
  • 1 cup grape tomatoes (halved)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 2 teaspoons Italian seasoning
  • 1/2 cup Parmesan cheese (shredded)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Cook the chicken breasts seasoned with salt and pepper for 5-7 minutes on each side until golden brown.
  3. Rest the chicken on a plate while preparing the vegetables.
  4. Sauté the minced garlic and chopped broccoli for about 3 minutes.
  5. Add the halved grape tomatoes and chopped sun-dried tomatoes, cooking for an additional 2-3 minutes.
  6. Make the sauce by whisking in the heavy cream and Italian seasoning until thickened.
  7. Combine the cooked chicken back into the skillet, coating it well with the sauce and vegetables for another 3 minutes.
  8. Add the shredded Parmesan cheese and let it melt.

Notes

Serve over cauliflower rice or with a side salad for a complete meal. This dish can also be customized with various vegetables.
