- 1 lb pasta (linguine, spaghetti, or penne)
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 Tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- ¼ cup fresh lemon juice
- 1 Tbsp lemon zest
- ½ cup freshly grated Parmesan cheese
- ¼ cup fresh parsley, chopped
- Salt and black pepper, to taste
- Red pepper flakes, optional
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente, reserving ½ cup of pasta water before draining.
- Heat olive oil in a skillet over medium-high heat, season the chicken, and cook until golden and cooked through.
- Add minced garlic to the skillet and sauté until fragrant, then stir in heavy cream, lemon juice, and zest simmering until thickened.
- Combine the cooked pasta and chicken in the skillet, adding Parmesan cheese and reserved pasta water.
- Finish by stirring in chopped parsley, adjusting seasoning, and serving hot with garnishes.
Notes
Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Add reserved pasta water or cream to loosen sauce upon reheating.
