Description

Ingredients

  • 4 pieces boneless, skinless chicken breasts (about 1 lb)
  • 1 cup orzo pasta
  • 4 cups low-sodium chicken broth
  • 2 pieces fresh lemons (zest and juice)
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Chop the boneless, skinless chicken breasts into bite-sized pieces.
  2. Heat the extra virgin olive oil in a large skillet over medium heat.
  3. Add the chopped chicken pieces and season with salt and pepper to taste. Cook for about 6-7 minutes.
  4. Add minced garlic and dried oregano to the skillet and stir for about a minute.
  5. Toss the orzo pasta into the skillet and stir well.
  6. Pour in the chicken broth and lemon juice, bringing to a gentle simmer.
  7. Cover the skillet and cook for about 10-12 minutes until orzo is tender.
  8. Stir in the lemon zest before serving.
  9. Serve warm and enjoy.

Notes

For a creamier texture, stir in a couple of tablespoons of cream or Greek yogurt just before serving.
