- 4 pieces boneless, skinless chicken breasts (about 1 lb)
- 1 cup orzo pasta
- 4 cups low-sodium chicken broth
- 2 pieces fresh lemons (zest and juice)
- 3 cloves garlic (minced)
- 1 tsp dried oregano
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
Instructions
- Chop the boneless, skinless chicken breasts into bite-sized pieces.
- Heat the extra virgin olive oil in a large skillet over medium heat.
- Add the chopped chicken pieces and season with salt and pepper to taste. Cook for about 6-7 minutes.
- Add minced garlic and dried oregano to the skillet and stir for about a minute.
- Toss the orzo pasta into the skillet and stir well.
- Pour in the chicken broth and lemon juice, bringing to a gentle simmer.
- Cover the skillet and cook for about 10-12 minutes until orzo is tender.
- Stir in the lemon zest before serving.
- Serve warm and enjoy.
Notes
For a creamier texture, stir in a couple of tablespoons of cream or Greek yogurt just before serving.
